Black Goji Berry (Lycium wolfberry ruthenicum) ou noir est un fruit nutritif qui contient un contenu plus élevé d'anthocyanine comparativement à d'autres baies telles que blackberry et de Blueberry.  Le groupe spécial de la qualité de Goji Berry noir d'anthocyanes est qu'ils sont acylés anthocyanes qui sont connus pour être plus stable que nonacylated anthocyanines.  Petunidin monoacylated dérivés d'anthocyanes sont les plus abondants en noir Goji Berry.  
Black Goji Berry anthocyanes montrent une grande variété de couleurs dans une gamme de valeurs de pH, et leur stabilité dépend du pH.
